Advanced Glycation End Products
I found this at the Life Extension website: http://www.lef.org/magazine/mag2003/may2003_awsi_01.html
Do you guys think Advanced Glycation End Products speed up hairloss?
I don't really eat much of any kind of fried food these days, except fried eggs. Do you think hard-boiled eggs are better than fried eggs when it comes to fighting 'AGE'? Is there a risk of biotin deficiency with hard-boiled eggs?

Re: Advanced Glycation End Products
Raw egg white contains avidin which binds to biotin and blocks its absorption. Heating the egg white deactivates this binding. I think that hardboiling eggs is more than enough to deactivate avidin. This is possible even better than frying, because hardboiling seems to cook the whole egg more thoroughly.
Egg yolks, in contrast, are rich in biotin. There are people like Dr Mercola who think that eating the WHOLE egg RAW is just fine... this way you don't waste anything, receive more nutrients and the egg yolk's biotin contents compensates for the avidin in the white and you don't have to worry about biotin deficiency.
The real problem is when you only eat RAW egg whites... eventually reaching a deficiency. That's because you are only getting biotin-binding avidin (active because it's raw) and no biotin.
I preffer to cook eggs but leave the yolk intact (lightly fried in coconut oil but don't cook the yolk)... and try to use the minimum heat possible. I also eat the raw egg yolks and throw away the whites, I add them to raw veggie juices... this increases absorption of certain nutrients thanks to the fats and provides healthy cholesterol and many other nutrients, untouched and unaltered by heat.
